Two Ingredient Mango Coconut Popsicles are super easy to make and a healthy treat for you and your little ones to enjoy on a hot summer day!
It’s the season of popsicles and ice cream, and my kids are totally on board with it. While I love going out for ice cream, making our own ice cream treats is pretty satisfying and delicious, too!
I’ve made a habit of making our own popsicles for a few reasons. For one, they are just so easy to make! You just throw some fruit, milk, maybe yogurt, and maybe some sweetener into a blender and pour it into popsicle molds. Easy peasy!
They’re also much healthier than buying them from the store. Don’t get me wrong – we have a box of fruit bars and a couple of pints of ice cream in our freezer as I’m typing. I just like knowing that the popsicles that I made, such as these, only have two ingredients in them and they’re completely healthy ingredients.
Another reason I enjoy making our own popsicles is to get Lars into the kitchen with me. He loves it, too. It’s definitely messier and a little more timely than if I make it myself but I love his eagerness to help me.
These Mango Coconut Popsicles are our latest creation and they were a hit. There are only two ingredients – mango and coconut milk, and they’re super creamy and perfectly sweet. The sweetness will definitely depend on the ripeness of your mango, so I’d recommend waiting until the mangos are softened and undoubtedly sweet!
As far as the coconut milk- I used organic coconut milk from Trader Joe’s. It added a richness and creaminess to the popsicles that you won’t get if you use boxed coconut milk, or try to substitute another milk. Plus, it adds some coconut flavor!
These were great as an afternoon snack on a hot afternoon as well as a post-dinner dessert!
Yields 8 popsicles
Ingredients
- 2 ripe mangos, peeled and fruit cut off the core
- 1 (15 ounce) can full-fat coconut milk
Instructions
- Combine mango and coconut milk in a blender and puree on high speed until blended, about 1 minute.
- Pour into popsicle molds and freeze at least a few hours - ideally overnight.
- Serve and enjoy!
