Anyone else get stuck in breakfast ruts? While my 20 month old loves to eat eggs for breakfast, my four year old loves his carbs. Cereal and buttered toast are his favorites.
As a result, I’ve had to get creative with breakfast items that are filled with whole grains, fruit, and ideally some protein. Enter: oatmeal cups! These Blueberry Peach Oatmeal Cups are great for when peaches are in season and I have an abundance in our kitchen.
What Ingredients are In Blueberry Peach Oatmeal Cups?
The ingredients in these oatmeal cups are super basic. The main ingredients are old fashioned oats, milk, eggs, honey, some cinnamon, chopped up peaches, and blueberries.
I used unsweetened almond milk in this batch, but I’ve also made them using organic whole milk, and I think that really any kind of milk would work.
I don’t think quick cooking oats would work as well as the old fashioned oats do in this recipe, and I can’t say that I’ve ever tried that.
These oatmeal cups are definitely adaptable to different flavors, and I will definitely be creating more flavor combinations in the future to share with you!
How to Make Blueberry Peach Oatmeal Cups
These oatmeal cups are a breeze to whip up. You simply combine all of the ingredients in a large bowl, divide the batter among a muffin pan, and bake them. So easy!
I often make a big batch of oatmeal cups and keep about half of them in the refrigerator for a quick breakfast or snack throughout the week, and freeze the other half. This makes it so easy to grab whenever we have a particularly busy week and I didn’t have time to get any breakfasts or snacks prepped.
My kids absolutely loved these, as did Marc and I! I loved grabbing them for all of us for a quick snack at the park or pool, as well as an on-the-go breakfast. Give them a try and let me know what you think!

Ingredients
- 4 cups old fashioned oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 cups unsweetened vanilla almond milk
- 1/3 cup honey
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 peach, pit removed and diced into small pieces
- 1 cup blueberries
Instructions
- Preheat the oven to 375 degrees F.
- In a large bowl, stir together the oats, baking powder, cinnamon, and salt.
- Add the milk, honey, egg, and vanilla, and stir well to combine.
- Fold in the diced peach and blueberries.
- Spray a 12-cavity muffin pan with cooking spray and fill each cavity almost to the top.
- Bake in the preheated oven for 20-22 minutes, until golden brown and cooked through.
- Serve and enjoy!
