Applesauce Oat Mini Muffins are full of whole grains, applesauce, and oats, and are perfect for a quick breakfast or snack!
Remember that Instant Pot Zucchini Applesauce that I made? I made Applesauce Oat Mini Muffins with it! I mean, it’s no secret that I like muffin-like things to feed to my kid. What can I say? They’re portable, healthy, and my kids LOVE them!
Muffins are also great because they can be for breakfast or snacks. You can even slather these Applesauce Oat Mini Muffins with peanut butter for a boost of protein!
What is in Applesauce Oat Mini Muffins?
I used the Zucchini Applesauce that I made in these muffins, but you can really use any applesauce that you prefer. I would recommend unsweetened applesauce, so you avoid high fructose corn syrup, but you do you!
Other ingredients in these muffins are whole wheat flour, old fashioned oats, milk, egg, and honey. I meant to throw in a handful of raisins at the end and completely forgot…doh! If your kids like raisins, feel free to add some in! Walnuts or Craisins would be great, as well.
Can These Be Baked in a Regular Muffin Pan?
Yes! I love using my mini-muffin pan when I make muffins for my kids, because the portions are much more realistic for them. However, these can definitely be made into 12 regular-sized muffins. Increase the baking time to 18-22 minutes, until they are baked through.

Ingredients
- 1 1/2 cups old fashioned oats
- 1 1/2 cups white whole wheat flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups applesauce
- 1/2 cup milk
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1/3 cup honey
- 1/2 cup raisins (optional)
Instructions
- Preheat the oven to 350 degrees F.
- Spray a mini muffin pan with cooking spray. You can also use a regular-sized muffin pan.
- In a large bowl, stir together the oats, flour, cinnamon, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the applesauce, milk, egg, vanilla, and honey.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the raisins, if using.
- Evenly distribute between 24 mini muffin cups or 12 regular sized muffin cups.
- Bake in the preheated oven for 12-13 minutes for mini muffins or 18-22 minutes for regular-sized muffins.
